Pressed juice from fully ripe apricots is central to Bailoni's apricot liqueur. The fruit is sorted by hand and pitted before being processed into juice. This provides the liqueur's flavour, aroma and colour; no colouring is added. Marillen is the Austrian word for apricots, the fruit in which Bailoni specialises.

This golden-amber liqueur opens with pronounced sweetness and ripe fruit, developing into a juicy impression with a silky, thick texture. Its honey-like finish is full-bodied. It is offered at 30% alcohol in the traditional rounded Boxbeutel bottle; this version contains 0.7 litres and comes without gift packaging. Wachauer Gold-Marillenlikör bears the Austrian Quality Seal. At the ADI Judging of Craft Spirits in 2019, it received a silver medal and the Best of Category award.

Tasting Notes:

• Nose: The nose offers the fruity aroma of ripe apricots with a sweetish note.
• Palate: On the palate, the liqueur is sweet, fruity and juicy. Apricot nectar and dried apricots define the flavour.
• Finish: The long finish is lively and reminiscent of honey.

Distillery/Bottler:

Bailoni is based in Krems-Stein in Austria's Wachau region. Apricots have been processed and distilled at its original premises since 1872. The business owns around 1,500 apricot trees and uses regional ingredients for its liqueurs and schnapps. In 1977, the apricot distillery was awarded the Austrian coat of arms; the company has been IFS-certified since 2016.

The harvest runs from early July to August. Bailoni gathers the fully ripe fruit by hand after it has fallen naturally from the trees and processes it immediately on site. For the liqueur, the pitted apricots are pressed. For its apricot distillates, by contrast, the company ferments the mashed fruit under controlled conditions and distils it three times; the high-strength distillate is then stored at the premises for up to two years.
