Special Features:

This official bottling from Leith was matured entirely in Oloroso sherry casks. The whisky is bottled at 47%, is non-chill filtered and contains no added colouring. It comes in a 0.7-litre bottle with gift packaging. The cask profile combines sherry sweetness and caramel with nuts, spicy oak and drying tannins, giving the whisky structure as well as sweetness.

Raisins, figs and dates meet walnuts, almonds, dark honey, caramel, orange peel and cocoa. On the palate, plum compote, raisin bread and dark chocolate intensify the fruity core, while cinnamon, cloves, ginger and drying tannins build tension. In the long finish, sherry, cocoa and nuts mingle with spicy oak, espresso and bittersweet orange peel.

Tasting Notes:

• Nose: On the nose, raisins, figs and dates combine with walnuts, almonds, dark honey, caramel, orange peel and cocoa, while oak and leather form a drier backdrop.
• Palate: The palate reveals plum compote, raisin bread and dark chocolate with nuts, cinnamon, cloves and ginger, before drying tannins provide structure.
• Finish: The long finish combines sherry, cocoa and nuts with spicy oak, espresso and bittersweet orange peel.

Distillery/Bottler:

Completed in 2019, Bonnington Distillery began production in Leith in March 2020. It was the port district's first single malt distillery in almost a century. Production uses water from an aquifer 147 metres below ground, interconnected spirit receivers and custom-designed stills with squat necks.

This single malt, matured entirely in Oloroso sherry casks, is an official bottling from Bonnington Distillery. The choice of casks brings dried fruit, nuts, spices and a dry oak structure to the fore.
