Special Features:

This North British matured for 33 years in a Refill Oloroso Sherry Butt. Refill means the cask had been used before; it does not specify how many times it had previously been filled. Dried fruit, pastries and dry spice complement the sweet grain character.

The whisky was distilled on 2 September 1991. Signatory Vintage bottled it from cask 262087 on 16 December 2024 for the Cask Strength Collection. The single cask yielded 430 bottles at 53.2% ABV; each comes in a metal tube. The whisky is not chill-filtered and contains no added colouring.

Tasting Notes:

• Nose: Dates, vanilla custard and toasted bread appear first on the nose. Cinnamon, nutmeg and clove follow, alongside more dried fruit and a hint of polished wood.
• Palate: On the palate, caramel and honey mingle with dates and figs. Cinnamon roll, roasted nuts and dark pastries bring dry sherry spice; the texture is silky and almost creamy, while oak balances the sweetness.
• Finish: The finish is long and soft. Toasted wood and baking spices linger with a delicate dryness.

Distillery/Bottler:

North British was founded in Edinburgh in 1885 by Andrew Usher, William Sanderson and John Crabbie. The three whisky entrepreneurs wanted to establish their own supply of grain spirit. The distillery began operating in 1887; its grain whisky is produced mainly for blends. Its production uses maize and continuous Coffey distillation.

Signatory Vintage is the independent bottler of this North British. Andrew Symington and his brother founded the company in 1988; since 2007, its operations have been based entirely at the Edradour distillery in Pitlochry. For this release, Signatory selected whisky from a single Refill Oloroso Sherry Butt and bottled it for the Cask Strength Collection.
