El Recuerdo Joven’s smoky character begins with the preparation of the agaves, which are cooked over river stones using certified wood. Made in Oaxaca, this mezcal consists entirely of Agave angustifolia of the Espadín variety. Unlike Abocado con Gusano, the Joven contains no added agave worm.

This crystal-clear mezcal combines the scent of cooked agave with herbs and light smoke. On the palate, fresh citrus notes complement the interplay of sweetness and a slight bitterness. The bottle contains 0.7 litres at 40% alcohol.

Tasting Notes:

• Nose: Pineapple, mandarin and grapefruit lead the nose. Yellow apple, mint and cinnamon complement the fruit, joined by a sweet caramel note. The aromas are medium in intensity. Cooked agave, gentle herbal notes and light smoke round out the bouquet.
• Palate: Mandarin and grapefruit combine with cinnamon on the palate. Acidity is more prominent than the subtle sweetness, which recalls pineapple and caramel. The alcohol is rather restrained.
• Finish: The medium-length finish remains citrus-led and fruity, with pineapple, orange and lime. Low astringency and restrained alcoholic warmth give it a soft close.

Distillery/Bottler:

El Recuerdo is produced by Mezcales Casa Armando in Tlacolula de Matamoros, in the Mexican state of Oaxaca. This family business spans five generations and produces Zignum and Señorío alongside El Recuerdo. Its operations include its own agave cultivation as well as mezcal processing and bottling.

Through its Método Verde programme, the company combines production with practical resource-management measures: it collects rainwater, treats the water used in its operations and meets part of its energy needs with solar concentrators. No animals are used in the production processes. El Recuerdo is made using traditional stone ovens and SEMARNAT-certified wood.
