Special features: Amaras Cenizo Joven Reserva Especial Mezcal is produced in Mexico from 14-year-old wild Cenizo agave (Agave durangensis). The agaves are roasted in conical underground ovens with mesquite and huisache wood. This is followed by a manual grinding of the roasted agaves with an axe. Fermentation takes place in open pine wood fermentation tanks at ground temperature, before distillation occurs in a copper pot still with a wooden lid. These production methods emphasize the artisanal traditions of mezcal production.
