Nc'nean Organic Single Malt combines Scottish organic barley with maturation in bourbon, specially treated red wine and Oloroso sherry casks. The citrus and peach notes develop in the spirit before maturation; the STR red wine casks add spice to the fruity house style. The combination of casks also contributes body and sweetness.

Alongside citrus and stone fruit, the whisky reveals sweet vanilla, creamy toffee sweets, allspice, raisins and coffee. It remains non-smoky. Its colour comes entirely from cask maturation; no colouring is added, and the whisky is not chill-filtered.

The 2023 bottling comprises 9,687 bottles. This single malt is bottled at 46% in a 0.7-litre bottle and comes in a gift tube. The bottle is made entirely from recycled glass. For an alternative to drinking it neat, try the Whisky Six: serve two parts whisky with four parts soda water over ice, with a sprig of fresh mint.

Tasting Notes:

• Nose: On the nose, the lively citrus note recalls fizzy lemon sherbet. Juicy apricots and white peaches accompany it.
• Palate: Waxed lemon zest and the piquant heat of chilli flakes initially take centre stage on the palate. Creamy vanilla ice cream, preserved mandarins and apricots follow.
• Finish: The long finish remains spicy, with subtle fruit notes lingering.

Distillery/Bottler:

Nc'nean is located on the Morvern peninsula on Scotland's west coast. Founder Annabel Thomas left her job in London in 2013 and devoted the following four years to financing and building the distillery. Distillation began in 2017, and the first whisky was released in 2020. The name derives from the Gaelic goddess Neachneohain, a huntress and protector of nature.

The distillery uses only unpeated Scottish organic barley and runs on renewable energy. To create its house style, it uses two yeast varieties and ferments for between 68 and 114 hours. During distillation, a narrow heart cut is selected to preserve the fruity character of the new-make spirit. The whiskies mature in warehouses on the distillery grounds. Nc'nean is B Corp-certified; since 2021, the distillery has been verified as having net-zero emissions for its direct emissions and those from purchased energy, known as Scopes 1 and 2.
