Special Features:

Nc'nean Organic Single Malt combines organic Scottish barley with a carefully tailored approach to cask maturation. The cask selection comprises 55% STR red wine casks, 43% former American whiskey casks and 2% Oloroso sherry casks. STR describes a treatment in which the inner wood surface is shaved, toasted and recharred. The red wine casks contribute jammy fruit and texture, while the small sherry component adds gentle spice.

The whisky is produced in small batches that may differ slightly from one another. Its underlying character remains fruit-led, with citrus cream, peach, apricot and spicy rye bread. It is bottled at 46% without chill filtration or added colouring. The 0.7-litre bottle is made entirely from recycled glass; this version is supplied without a gift tube.

Tasting Notes:

• Nose: On the nose, orange peel and apricot combine with raspberry jam and a biscuit-like aroma.
• Palate: The palate offers lemon cream and stone fruit, accompanied by spicy rye bread, honey and soft caramel confectionery.
• Finish: The medium-length finish fades with juicy fruit and creamy notes.

Distillery/Bottler:

Nc'nean is located on the Drimnin Estate on the Morvern peninsula on Scotland's west coast. Founder Annabel Thomas left her consultancy career in 2013 to take forward the financing and construction of the distillery. Distillation began in March 2017. Whisky expert Dr Jim Swan helped guide its development, particularly influencing the decision to use STR red wine casks.

For its house style, the distillery uses only unpeated organic Scottish barley and two yeast strains: one for fruity aromas and a traditional distilling yeast. Fermentation lasts between 68 and 114 hours. A one-hour rest during mashing and subsequent clarification of the wort support the intended light, fruity style. Nc'nean distils slowly and selects a narrow heart cut, the portion of the spirit that goes into casks for maturation.

Production heat comes from a biomass system using wood from the Drimnin Estate; harvested areas are replanted. The distillery is verified as Net Zero for its directly controlled emissions and emissions from purchased energy, Scope 1 and 2. This classification does not cover the entire supply chain, such as barley cultivation, packaging production and transport.
