This Mannochmore was finished for several months in former Islay whisky casks: Murray McDavid specifies barriques and hogsheads from the Caol Ila Distillery. Shaped by peat smoke, the casks add sweet smoke, gentle oak spice and a maritime coastal character to the unpeated, malt-forward Speyside single malt. The bottling belongs to Cask Craft Batch 3 and is bottled at 44.5% with natural colour.

The original character remains evident in rich malt and gentle fruit, followed by a dry, clean finish. The influence of the Islay casks adds smoky coastal notes and a hint of red fruit. This explains the contrast between the unpeated base whisky and the smoky profile of the finished bottling.

Tasting Notes:

• Nose: The nose reveals gentle coastal peat smoke, red apple, peach, malted barley, green grass and a light hint of brine.
• Palate: The whisky begins sweet on the palate before becoming slightly savoury; malted barley is followed by vanilla, spicy oak and orange.
• Finish: The medium-length finish combines clove, black pepper, apricot jam and caramel with delicate floral nuances and distant maritime smoke.

Distillery/Bottler:

Mannochmore Distillery produced the unpeated Speyside single malt. Murray McDavid selected it for the Cask Craft range, carried out the additional maturation and bottled it as an independent bottler. The range brings together single malts from different parts of Scotland and focuses on the interplay between spirit and different types of wood.

Murray McDavid manages more than 45,000 casks from over 90 Scottish distilleries in Coleburn’s traditional whisky warehouses. Its Whisky Creations Team assesses the quality and structure of the spirits, sources freshly emptied casks from other drinks producers and monitors the continued maturation of each cask. This approach provides the basis for targeted additional maturation such as the Islay finish given to this Mannochmore.
