J.Bally Rhum Blanc puts sugarcane, rather than cask maturation, at the heart of its character. This unaged rhum agricole is made from fresh sugarcane juice and bears the AOC Martinique designation of origin. Fully ripe sugarcane is selected for the brand’s white rums. This expression is bottled at 50% alcohol in a 0.7-litre bottle.

Its character combines floral and fruity impressions with the vegetal side of sugarcane. This makes it suitable both for sipping neat and for a Ti Punch or Planteur, where these aromas can shine.

Tasting Notes:

• Nose: The nose has a pronounced floral character, with fresh sugarcane, orange blossom and honey. Dry vegetal notes of linden and tea meet citrus fruit, pineapple, banana and West Indian cherry. Alongside these notes, the sugarcane initially feels lively, dry and grassy before a sweeter impression emerges. With air, fermentation notes reminiscent of pickled vegetables come forward, accompanied by a slight hint of iodine, faded herbs and a little pepper.
• Palate: The rum opens with a rounded feel on the palate, and sugarcane flavours unfold gently. The mid-palate becomes distinctly vegetal and grassy. A hint of pepper is followed by deeper, iodine-like impressions.
• Finish: The finish feels drier and recalls sugarcane peel with a peppery note.

Distillery/Bottler:

J.Bally has its roots in an estate on Martinique that began processing sugarcane juice into what was then known as Rhum z’habitant. Rhum agricole developed from this tradition. Today, J.Bally’s white rum is produced at the Saint-James site in Sainte-Marie. It has a dedicated distillation column there, and production is overseen by oenologist Marc Sassier. Selecting fully ripe sugarcane is one of the deliberate production choices behind the brand’s white rums.
