Profil Équilibre brings together the three wood-matured rhums Profil 62, Profil 105 and Profil 107. The components matured for between twelve and 24 months in new American oak casks. The blend combines their distinct profiles, bringing fresh sugar cane character together with fruity, floral, woody and spicy notes. The rhum was reduced to 49% before bottling.
The Foundations edition pairs the blend with a bottle design by Carole Aurore. The artist from Martinique adds a distinctive visual touch through her colourful work. The edition comprises 1,500 bottles.
Tasting Notes:
- Nose: On the nose, fresh lemon notes meet vanilla and milky coconut notes. The bouquet develops towards sugar cane, resinous hints of pine sap and a sweetness reminiscent of acacia honey.
- Palate: The rhum is full-bodied and creamy on the palate. Herbal impressions accompany pear and plum before sugar cane honey and ripe banana emerge.
- Finish: The long, silky finish reveals a light anise note. As it lingers, pineapple, coconut and spicy hints of ginseng and cloves unfold.
Distillery/Bottler:
Neisson was founded in 1932 on the Thieubert estate in Le Carbet, Martinique. Adrien Neisson had bought the land the previous year; his brother Jean, a chemical engineer, contributed the technical expertise needed to develop the distillery. Since 1995, Jean's daughter Claudine Neisson Vernant and his grandson Grégory Vernant have continued the family story. In 2018, the distillery received the Entreprise du Patrimoine Vivant distinction in recognition of its craft heritage.
Fresh sugar cane juice forms the basis of the rhums. Neisson uses its own yeasts, originating on the distillery's sugar cane plants, and ferments the juice for 72 to 120 hours. The fermented juice is then distilled continuously in an all-copper Savalle column. Installed in 1952 and further developed by Jean Neisson, the column is dismantled and inspected every year. Neisson produces under the AOC Martinique appellation and bottles its rhums on site.
