Special Features:

The combination of bourbon and Rioja wine casks shapes this Single Island Rum from Negros. Don Papa 7 matures for seven years in American oak casks at the foot of Mount Kanlaon. The former Rioja wine casks complement the bourbon cask maturation, adding further depth of flavour to the rum. Selected rums are then blended together.

In the glass, the rum has a light amber colour. Its fruity, sweet character combines a full body with gentle spice and a dry oak accent on the finish. It is bottled at 40% alcohol and offered in a bottle containing 0.7 litres without gift packaging.

Tasting Notes:

• Nose: Fruity notes of roasted citrus fruit, strawberries and fruit compote lead the nose. A hint of mango adds to the aroma.
• Palate: The rum feels rich and full-bodied on the palate. Ripe mandarins, brown sugar and soft vanilla cream combine with lemon zest and a hint of fresh ginger with warm spice.
• Finish: The long, rich finish reveals caramel notes. A hint of lemon zest and dry, toasted oak round out the aftertaste.

Distillery/Bottler:

The Bleeding Heart Rum Company is behind Don Papa. The brand has close ties to Negros, a Philippine island whose economy was strongly shaped by sugar cane cultivation from the 19th century well into the 20th century. Its name recalls Papa Isio, a former sugar plantation foreman who took part in the struggle for Philippine independence.

The rum is made using molasses from the island's sugar cane. Around the active volcano Mount Kanlaon, fertile volcanic soils meet a tropical climate. Fermentation and distillation are followed by cask maturation; selecting and blending the matured rums are part of the Master Blender's work. Don Papa is bottled in small batches.
