Don Papa Masskara is a flavoured rum-based spirit from the Philippine island of Negros. Dedicated to the colourful Masskara Festival in Negros Occidental, it combines aged rum with local Philippine ingredients. The molasses-based rum matures in American oak casks.

To create Masskara’s distinctive style, the rum base is blended with a pot-still infusion of hand-picked calamansi and Siling Labuyo, then rounded out with local honey. Calamansi brings lively citrus freshness, while the Philippine chilli adds warmth and piquant spice.

In the glass, honeyed sweetness, candied fruit and fresh citrus notes form a soft, approachable combination, contrasted by a spicy aftertaste. Bottled at 40%, the spirit can be enjoyed neat, over ice or as a highball with soda water.

Tasting Notes:

• Nose: The nose reveals rich honey, accompanied by a delicate fresh citrus note and a hint of sweet vanilla.
• Palate: The spirit is soft and fruity on the palate, combining honey, candied fruit and sweet citrus notes.
• Finish: The finish is long and rich, with the chilli spice of Siling Labuyo adding a warming touch at the very end.

Distillery/Bottler:

Don Papa was established on Negros in 2012 as a brand of the Bleeding Heart Rum Company. Founder Stephen Carroll developed the brand in the heart of the Philippine sugarcane region, also known as Sugarlandia. Sugarcane from Negros, together with distillation and maturation on the island, defines its origins.

The brand’s name commemorates Papa Isio, a leading figure in the Philippine Revolution in the late 19th century. He initially worked as a foreman on a sugar plantation and later helped liberate Negros from Spanish rule. Don Papa has been part of Diageo since the acquisition was completed on 10 March 2023. Through its connection to the local festival and its Philippine ingredients, Masskara reflects the brand’s homeland.
