Special Features:

Doorly's three-year-old white rum combines pot-still and column-still rums distilled in Barbados. The components mature for at least three years in small oak casks. Three-stage activated charcoal filtration then removes the colour acquired during maturation. The clear rum retains aromatic influences from its time in oak.

Sugar cane, vanilla, banana and other tropical fruits combine with dry oak and pepper notes. Bottled at 47%, the rum can be enjoyed neat and also brings body and aromatic structure to classic rum cocktails.

Tasting Notes:

• Nose: On the nose, creamy vanilla ice cream, green banana and crisp pear combine with fresh coconut and green sugar cane. A subtle hint of green tea completes the aroma.
• Palate: The rum feels oily on the palate and shows the sweetness of cane sugar. Nuances of white grapefruit, lemon and lime peel and crisp white peach add to the flavour, complemented by oak notes.
• Finish: The long, warm finish is dry and oak-led. Coriander seeds and white pepper lend a piquant spiciness, with lingering notes of green cabbage and a hint of green tea.

Distillery/Bottler:

Doorly's is a brand of the Foursquare Rum Distillery in Barbados. The distillery belongs to the Seale family, and Richard Seale is its master distiller. R.L. Seale and Company Ltd. bottles this three-year-old edition.

Foursquare opened in 1996 on the site of a former sugar factory. The distillery produces lighter rums in a three-column vacuum distillation system and heavier, more complex spirits in copper pot stills. These different distillation methods form the basis of its blends.
