A finish in former Sauternes wine casks shapes Eminente Gran Reserva Edition N°2. This Cuban rum consists of 80% aguardiente, a spirit distilled from molasses, complemented by light rum. The spirits used are aged for at least ten years. The Sauternes casks add a sweet, fruity dimension to the spicy character.

For this edition, César Martí selects aguardientes aged in a dry warehouse in central Cuba. There, water evaporates faster than alcohol, contributing to this edition's strength of 43.2%. The aguardientes are blended with light Cuban rum and aged together once more. Before the Sauternes finish, the rum matures in white oak casks that previously held whisky. It is bottled at 43.2% in a 0.7-litre bottle.

Alongside dried fruit and apricot notes, the rum has tropical touches of mango and pineapple as well as woody accents. It can be enjoyed neat or with a large ice cube. The textured bottle evokes crocodile skin, reflecting Cuba's nickname, Isla del Cocodrilo.

Tasting Notes:

• Nose: On the nose, dried fruit and honey mingle with floral notes. Vanilla and caramel round out the aromas.

Eminente was founded in 2020 and belongs to Moët Hennessy. The brand is rooted in central Cuba. In his work, its Maestro Ronero César Martí brings together the aromatic richness of the eastern rum tradition and the drier style of the island's west.

Martí has a background in chemistry and completed a doctorate on the interaction between wood and spirits. His study of cask maturation finds practical expression in the Gran Reserva range: while Edition N°1 received a finish in French oak, Edition N°2 uses former Sauternes casks.
