For L'Empyreumatique, Neisson blends rhums aged for eight years in Cognac and bourbon casks. This first cuvée is bottled without dilution at 50.8%. Its name evokes roasted and grilled aromas, which develop here without excessive woodiness.
The rhum is neither chill-filtered nor coloured. The bottle contains 0.7 litres and comes in a wooden box.
Tasting Notes:
- Nose: The nose is rich and deep, shaped by beeswax, toast, tiger balm, eucalyptus, apricot kernels, orange peel and gentian root. With air, candied lemon and pear emerge alongside balsamic pine, lavender and iris.
- Palate: The palate is lively and delicate, with banana, pineapple, candied lemon, vanilla and notes of sage and verbena infusions. A salty note accompanies fresh ginger and sugar cane. Over time, occasional medicinal hints of adhesive dressings and mustard poultices appear.
- Finish: The fresh, slender finish combines mineral, salty herbal and root bitterness with kaffir lime, pineapple and grapefruit. On exhaling, floral vetiver, liquorice and essential-oil notes of rosemary, savory and geranium emerge.
Distillery/Bottler:
Neisson is a family-owned distillery on the Thieubert estate in Le Carbet, Martinique. Adrien Neisson acquired twenty hectares of land there in 1931 and planted sugar cane to make rhum agricole from pure sugar-cane juice. The distillery was officially founded in 1932. His brother Jean drew on his training as a chemical engineer to develop production. In 1995, Jean's grandson Grégory Vernant and Grégory's mother, Claudine Neisson Vernant, took over responsibility.
Neisson uses its own yeasts for fermentation, originating from the distillery's sugar-cane plants. Fermentation lasts between 72 and 120 hours. The fermented sugar-cane juice is then distilled continuously in an all-copper Savalle column. In use since 1952, its plates and settings were specifically modified by Jean Neisson. For annual maintenance, the column is dismantled, inspected and reassembled. Neisson bottles its entire production on site.
