Complex Pure Single Rum from Providence
In the sugarcane paradise of Haiti, the Italian bottler Velier, led by rum aficionado Luca Gargano, together with La Maison du Whisky and the Barbancourt-Linge family (descendants of the famous Barbancourt rum dynasty), fulfilled their dream of owning their own distillery in 2018. Distillerie de Port au Prince revives traditional methods and techniques and produces the finest sugarcane distillates with Providence – with respect for the land, agriculture, and people.
In addition to dunder, the aromatic liquid remaining in the still after distillation, the Providence 2021 was also made from the syrup of the ancient, aromatic Cristalline sugarcane variety. This variety is organically cultivated by Michel Sajous in Saint-Michel de l'Attalaye. Fermentation with various yeasts also contributes robust aromas. Double-distilled in a copper Müller pot still according to Haitian tradition, the Haitian Pure Single Rum matured for three years in former distillery barrels, reburned, and repeatedly filled and emptied—as well as bourbon casks and former casks from the iconic "lost distillery" Caroni.
The effect? A lively profile where roasted sugar cane and walnut meet candied citrus fruits, ginger, and vanilla custard before a smooth, long, and complex finish.
