Tortuga Verde from the XO Collection is aged in a tropical climate in former bourbon casks from Tennessee. Made from local sugar cane molasses, the rum spends at least ten years in cask. This release was distilled in 2013 and bottled in 2025 at 40% in 0.7-litre bottles.

Maturation involves the traditional pallet method. Every two years, the casks are topped up with rum that is at least as old, preserving the desired flavour profile. Tortuga Verde means green sea turtle, reflecting the brand’s connection to the Central American coastlines between the Pacific and the Caribbean. The rum has a mahogany hue with copper highlights and contains no colouring.

Tasting Notes:

• Nose: On the nose, sweet fruit notes of sun-dried raisins meet cocoa and coffee. Chocolate adds to the aroma, while a hint of lemon zest provides a fresh accent.
• Palate: The rum is light, mild and balanced on the palate. Acacia honey and dark chocolate combine with apricot and fresh citrus notes, with a creamy quality to the chocolate note.
• Finish: The finish remains soft and gentle. A restrained sweetness accompanies fruity and chocolate notes.

Ron Dos Mares was founded by Mads and Glenn. The brand is run by Dos Mares ApS in Nibe, Denmark, while its rum is produced in Panama. The name Dos Mares, meaning two seas, refers to Panama’s location between the Pacific and the Caribbean Sea.

Production of Ron Dos Mares begins with sugar cane molasses. A selected yeast strain is used for fermentation, followed by distillation in a traditional column still. Cask ageing takes place in Panama’s tropical climate, where heat and humidity shape maturation. Pallet storage and regular topping up with rum that is at least as old are part of the brand’s approach.
