This white rum puts the spirit itself centre stage: S.B.S Origin Australia KLK is unaged, revealing its character without wood or maturation aromas from a cask. It comes from Australia’s Killik Distillery. The molasses undergoes three weeks of fermentation before pot still distillation. The rum was distilled and bottled in 2023.

The S.B.S Origin Selection complements the aged rums of the Single Barrel Selection with selected unaged spirits, offering a chance to discover each distillery’s style before cask maturation. The Australian release combines pronounced ester aromas and fruit with peppery spice and sweetness, becoming creamy and fruity towards the end. At 57%, it lends itself both to drinking neat and to characterful cocktails such as a Daiquiri. The rum is bottled without chill filtration or added colouring.

• Nose: Distinctive, funky ester aromas shape the nose, accompanied by strawberries and the sweetness of ripe pears.
• Palate: Peppery spice meets sweetness on the palate; towards the end, the rum becomes creamy and fruity.

Distillery/Bottler:

Killik Handcrafted Rum is a family-run distillery in Belgrave, in the Australian state of Victoria. Its methods draw on ester-rich Jamaican rum styles: wild fermentation develops the distinctive character known in the rum world as hogo. The name Killik derives from “killick”, a traditional anchor consisting of a stone held in a wooden frame.

The Danish company 1423 World Class Spirits is responsible for selecting and bottling the rum. Its story began in 2008, when a group of whisky enthusiasts discovered rum at a fair. Their first rum was a blend from Barbados and Trinidad, bottled in November 2008 and released in early 2009. Its sample number, 1423, became the company’s name. Through the S.B.S Origin Selection, the company focuses specifically on the original character of selected spirits.
