Islay Rum Peat Spiced gets its smoky character from ingredients smoked over a peat fire. Orange, ginger and cacao nibs form the core of the recipe; the distillery keeps the remaining ingredients secret. The rum is unaged and produced in small batches. Its peat smoke therefore does not come from maturation in former whisky casks.

The miniature contains 0.05 litres at 40% alcohol. It offers the smoky, chocolatey and spicy character of Peat Spiced in a small bottle.

Tasting Notes:

• Nose: On the nose, orange peel and candied ginger mingle with liquorice and anise.
• Palate: On the palate, pronounced chocolate notes meet vanilla and warming spices.
• Finish: The long finish recalls a smoky Christmas cake threaded with dark chocolate.

Distillery/Bottler:

The Islay Rum Company produces its rum at the Old Lemonade Factory in Port Ellen. Harold Hastie built the premises as a lemonade factory, and the building stood empty for many years after drinks production ceased. Brian Crook, owner of The Vintage Malt Whisky Company, purchased it in 2018. Through Jim McEwan, he met Ben Inglis, who had grown up on Islay and wanted to establish a rum distillery there. With support from The Vintage Malt Whisky Company, the former factory was restored; distillation began in 2021.

The distillery combines its island setting with Caribbean-influenced distillation techniques. Molasses is the raw material, fermented with water and yeast. Standard fermentation takes five to seven days, depending on the desired flavour profile and conditions. Ben Inglis works with a copper pot still and two retorts, in which intermediate alcohol-bearing fractions are distilled again during the next run. This method is part of the distillery's rum production. The distillery also uses longer fermentations for experimental bottlings.
