Rye defines this whisky from Schliersee, but its grain recipe comprises three components: 55% malted rye, 25% malted wheat and 20% malted barley. This distinguishes SLYRS Bavarian RYE from the distillery’s single malt. The recipe combines a distinctly fruity nose with a mild palate that brings together sweetness and slightly bitter spice notes.

The whisky matures for at least three years in heavily charred American white oak casks. Their designation, Crocodile Toasted, refers to the charred inner surface, whose texture resembles crocodile skin. The rye is bottled without added colouring at 41% alcohol in a 0.7-litre bottle. It comes in gift packaging.

To develop the rye, master distiller Hans Kemenater and SLYRS co-founder Anton Stetter spent several weeks travelling through the northeastern USA, learning from farmers and fellow distillers. Their findings informed the recipe under the direction of master brewer Philip Zollner. Following several years of development, the first SLYRS Rye was launched in 2020. The distillery recommends drinking it neat and slightly chilled.

Tasting Notes:

• Nose: Ripe fruit clearly leads the nose, complemented by a light cinnamon note.
• Palate: The whisky is mild on the palate. Its well-integrated sweetness combines with spice and slightly bitter notes of liquorice, cinnamon and allspice.
• Finish: The long finish shows subtle dryness and gentle peppery spice. The mouthfeel remains balanced.

Distillery/Bottler:

SLYRS is based at Schliersee in Upper Bavaria and has been making whisky since 1999. The distillery employs a team of trained distillers and brewers. Its single malt production includes temperature-controlled fermentation with its own whisky yeast and double distillation in copper pot stills. Generous cuts separate the heads and tails from the heart used for the whisky. The rye broadens the range with its own rye-led, three-grain recipe.
