Tasting Notes:
Distillery/Bottler:
Holyrood Distillery began operating in central Edinburgh in 2019, bringing a single malt distillery back to the city centre after more than a century. Its work with heritage and speciality malts alongside different yeasts aims to develop flavours from the fermentation stage onwards. Noir Bordeaux Yeast is a distillery bottling that applies this approach with Pinnacle M and BP725.
