Special Features:
This four-year-old Lowland single malt combines maturation in a bourbon cask with a 14-month finish in a Palo Cortado sherry barrique. It was distilled on 4 March 2021 and bottled on 1 December 2025. Elliot Wynn-Higgins, the distillery's Export Manager, selected the cask for the Elliot's Exclusive Cask series.
Palo Cortado is a dry, oxidatively aged sherry that combines the delicate aromas of an Amontillado with the fuller body of an Oloroso. The barrique used for this finish gives the bottling its distinctly nutty and spicy character.
Cask 244014 yielded 338 bottles. The whisky was bottled at 51.6% without chill filtration or added colouring.
Tasting Notes:
- Nose: On the nose, velvety fudge, Scottish toffee and milk chocolate mingle with orange peel. A hint of cinnamon adds a warm spicy accent.
- Palate: The whisky is full-bodied and creamy on the palate. Oats and oat biscuits meet juicy raisins and toasted almonds, while gentle sweetness and delicate spices accompany the nutty structure.
- Finish: The finish is long-lasting. Toasted almonds and gentle sweetness linger, while soft spice notes shape the close.
Distillery/Bottler:
Lindores Abbey Distillery is located in Newburgh, in the Scottish county of Fife. The site is closely linked to the earliest written record of whisky production in Scotland: in 1494, the Lindores monk John Cor received a royal commission to make Aqua Vitae from eight bolls of malt. Spirit flowed again at the modern distillery in 2017, and its first single malt was released in 2021.
The family-owned distillery uses barley from the surrounding Fife area and water from a nearby borehole for its whisky production. Fermentation takes place in wooden washbacks. One large wash still and two smaller spirit stills provide additional copper contact during the second distillation and are designed to produce a clean, delicate spirit. The distillery deliberately works with different cask types to develop this underlying character in varied ways.
