This Orkney Single Malt matured for a total of 15 years and was finished in First Fill Pedro Ximénez Sherry Butts. Signatory Vintage bottled the whisky, distilled in 2011, in 2026 as Edition #83 of its 100 Proof series. The distillery behind this independent bottling is not named.

The Pedro Ximénez casks shape the whisky with dark fruit, honeyed sweetness and caramel, balanced by spicy oak and the restrained smoke of the Orkney malt. Its bottling strength of 57.1% corresponds to the strength that gives the 100 Proof series its name.

The whisky comes in a 0.7-litre bottle and was bottled without chill filtration or added colouring. This preserves its natural colour and the character shaped by the distillate and casks.

Tasting Notes:

• Nose: The nose offers pronounced sweetness with heather honey, ripe raisins and orange peel. Floral notes, vanilla and a subtle hint of smoke complement the sweet fruit aromas.
• Palate: The palate is creamy and sweet, with honey, dark caramel, raisins and dates. Spicy oak and light smoke provide balance.
• Finish: The finish is long and spicy. Oak and cocoa linger alongside a fruity, sherry-like aftertaste.

Distillery/Bottler:

Signatory Vintage is an independent Scottish bottler founded by Andrew Symington and his brother in 1988. Its first release was a Glenlivet distilled in 1968. Although the original plan to have every bottling signed by a celebrity was not pursued, it gave the company its name.

Andrew Symington acquired Edradour Distillery in 2002, and by 2007 Signatory had moved its entire operation to the distillery’s site in Pitlochry. Storage capacity for more than 20,000 casks has since been established there. For this edition, Signatory acts as the bottler of the unnamed Orkney Single Malt, combining its 15-year maturation with a finish in First Fill Pedro Ximénez Sherry Butts.
