Special Features:

Apogee XII brings together Scottish single malts and additional maturation in casks from London's Bimber Distillery. The selected whiskies from the Highlands and Speyside initially matured for at least twelve years. Once blended, they were transferred to former bourbon casks that had subsequently held Bimber's own London Single Malt. This additional maturation adds the fruity, spicy influence of the ex-Bimber casks to the blend.

The whisky is bottled at 46.3% without chill filtration or added colouring. Its specially designed bottle has a textured glass surface reminiscent of the hammered copper surfaces of Bimber's small stills. It contains 0.7 litres and comes in gift packaging.

Apogee XII took more than two years to develop. The Bimber team experimented with both the blend of individual malts and their additional maturation in previously used casks. An initial worldwide release of 25,000 bottles was planned for the launch from November 2021, while Apogee was also conceived as a permanent offering.

Tasting Notes:

  • Nose: On the nose, spicy pears meet baked apricot tartlets and the sweetness of sugar candy. Rosewater, nutmeg and ground ginger complement the fruity pastry aromas.
  • Palate: The palate offers syrupy orchard and stone fruits with a lively, fresh mouthfeel. Lightly charred oak, gentle white pepper and cooling mint accompany the fruit.
  • Finish: Ripe, sweet fruit notes linger, accompanied by a harmoniously integrated, aromatic oak note.

Distillery/Bottler:

The independent Bimber Distillery in London produces its own single malt and is responsible for selecting, blending and further maturing the Scottish malts purchased for Apogee. To develop this blend, the team conducted numerous trials in its blending laboratory and experimented with different uses of oak casks that had previously held Bimber Single Malt.

For its own London Single Malt, Bimber uses barley from a single farm. It is malted on traditional malting floors and mashed by hand. Fermentation then lasts seven days in wooden washbacks made in the distillery's own cooperage. Small, directly fired copper stills are also part of the distillery's production process. The first casks were filled on 26 May 2016; its first single malt, The First, was released in September 2019.
