Special Features:

Maturation in a single sherry cask shapes this unpeated Islay single malt. Bunnahabhain distilled the whisky in December 2008; Duncan Taylor bottled it in January 2024 after 15 years in cask no. 38551197. The cask yielded 618 bottles at 54.4%. The whisky is non-chill-filtered and contains no added colouring.

Dried fruit, nougat and nuts define its non-smoky character. Salty accents complement the fruity sweetness, while cinnamon, nutmeg and oak spice provide a spicy counterpoint.

Tasting Notes:

• Nose: The nose is fresh, fruity and sweet. Nougat cream and raisins combine with warm raspberry and salted cashews, complemented by a subtle cinnamon note.
• Palate: The whisky is full-bodied and complex on the palate. Dried dates, figs, juicy raisins and ripe cherries appear first. Salted caramel, rich nut pastries and pronounced oak spice follow.
• Finish: Dried fruit, cocoa, winter spices and nuts linger in the medium-length finish.

Distillery/Bottler:

Bunnahabhain lies in the northeast of Islay. William Robertson founded the distillery in 1881 with brothers William and James Greenlees; production began in 1883. Houses and roads for employees and their families were built alongside the distillery. Bunnahabhain draws its production water from the Margadale spring, around a mile north of the distillery.

For this single-cask release, independent bottler Duncan Taylor selected the sherry cask and bottled the whisky matured in it. The company has its own warehousing, cooperage and bottling facilities in Huntly, managing its whiskies through cask management to bottling. Casks are made and repaired in its own cooperage. Sensory assessment is also part of its approach: the tasting panel must approve the whisky from each cask before it can be bottled.
