Maturation in first-fill ex-bourbon barrels is at the heart of this Cotswolds Single Malt. Made from American white oak, the casks come from Kentucky. They lend vanilla and honey notes to the fruity spirit, shaping the sweet, malty character of this release from the Cask Expressions Collection.

The whisky is made exclusively from barley grown in the Cotswolds and malted using traditional floor-malting methods. Two yeasts, Anchor and Fermentis, are used for fermentation. The whisky is bottled at a cask strength of 59.1%, without chill filtration or added colouring. The bottle contains 0.7 litres and comes in gift packaging.

Tasting Notes:

• Nose: Vanilla mingles with the sweet scent of honeycomb on the nose.
• Palate: The whisky is malt-forward and full-bodied on the palate. Light sugar syrup and ripe orchard fruit complement the flavour.
• Finish: The long, warming finish leaves gentle spice and lingering sweetness.

Distillery/Bottler:

Cotswolds Distillery opened its doors in July 2014. Its founder, Dan, had previously worked in London's financial sector and, after moving to the Cotswolds, wanted to use the region's barley to make his own whisky. The distillery released its first single malt in October 2017. Alongside its Signature bottling, it later developed various cask ranges and selected single-cask releases.

Harry Cockburn and Dr Jim Swan helped shape the distillery's production methods. Warminster Maltings carries out the traditional malting of the locally grown barley. At the distillery, the wort ferments in steel vessels for more than 90 hours. This produces fruity esters that help define the spirit's character. During double distillation, collection of the heart begins and ends comparatively early, capturing the fruit notes that emerge early in the run while excluding heavier compounds.
