Cotswolds Signature was the first whisky distilled in the Cotswolds. Cotswolds Signature draws its character from two complementary cask types: whisky matured in STR red wine barriques is married with whisky from first-fill bourbon barrels. The red wine casks are made of American oak, with their inner surfaces shaved, toasted and re-charred. These treatments give STR its name: Shaved, Toasted and Re-charred. The active barriques contribute to the bold fruit character of this expression from the Classics Collection.

The whisky is made exclusively from barley grown in the Cotswolds and traditionally floor-malted. Honey, red fruit and a hint of dark sugar syrup characterise this single malt. It is bottled at 46% alcohol without chill filtration or added colouring.

Tasting Notes:

• Nose: On the nose, honey and butterscotch mingle with fresh and cooked stone fruit. Marzipan adds a nutty note.
• Palate: The whisky feels rich and oily on the palate. Orange marmalade and brown sugar meet tannins and a spicy note of freshly cracked black pepper.
• Finish: Dark sugar syrup, dark red fruit and gentle woody notes linger on the finish.

Distillery/Bottler:

Daniel Szor founded Cotswolds Distillery in 2014 in the English region of the same name. Whisky expert Dr Jim Swan and Harry Cockburn, who had previously managed Bowmore distillery, helped him establish it. The locally grown barley is processed at Warminster Maltings, where it is turned by hand during traditional floor malting.

To develop its fruit-forward distillery style, Cotswolds ferments the wort for over 90 hours in steel washbacks using two yeasts, Anchor and Fermentis. This long fermentation encourages the formation of fruity esters. Double distillation follows. During the second distillation, the distillery starts collecting the heart early to capture these fruit aromas; it also makes an early cut to the tails to keep heavier compounds out of the heart.
