Special Features:

The Dalmore 15 Year Old combines lengthy bourbon cask maturation with the influences of three different types of sherry cask. The single malt first spends twelve years in American white oak casks previously used for bourbon. The whisky is then divided between Amoroso, Apostoles and Matusalem Oloroso sherry casks, where it matures for a further three years.

After this separate period of secondary maturation, the whiskies are brought together and married in a Sherry Butt. This allows the different cask influences to come together once more before bottling. Available since 2007, this expression combines citrus fruit and spices with a chocolatey finish. It has an alcohol content of 40% and is offered here in a bottle containing 0.7 litres, with gift packaging.

Tasting Notes:

• Nose: On the nose, orange marmalade aromas mingle with cinnamon and nutmeg.
• Palate: On the palate, mandarin and vanilla meet ginger and notes of crushed apple.
• Finish: Caramelised orange and bold dark chocolate take centre stage in the finish.

Distillery/Bottler:

Dalmore Distillery is situated near Alness on the Cromarty Firth in the northern Highlands. Alexander Matheson founded it in 1839 on a site previously used as a mill and farm. The Mackenzie family later took over the distillery. They are associated with the twelve-pointed stag emblem that still adorns Dalmore bottles today.

One distinctive feature of the distillation process is the flat heads of the wash stills, in which the fermented mash undergoes its first distillation. During the second distillation, the necks of the spirit stills are cooled. This causes some of the rising vapour to condense and flow back into the still. This reflux influences the character of the spirit. The subsequent combination of bourbon and sherry casks is an important part of Dalmore's cask maturation.
