Special Features:

This Dalmore spent its entire 21-year maturation in a first-fill Oloroso sherry hogshead. The whisky was distilled on 22 October 2003, and Signatory Vintage bottled it on 11 November 2024 for Symington's Choice within the Cask Strength Collection. Cask 14736 yielded 199 bottles at a natural cask strength of 52.9%. The whisky is neither chill-filtered nor coloured, and comes in a metal tin.

Dark fruit and sherry sweetness meet chocolate, roasted nuts and malt. Orange marmalade, cherries and figs provide the fruity notes, while tobacco, cocoa and oak spice add more mature accents. Fruit lingers through the long finish, alongside a slight bitterness and dryness.

Tasting Notes:

  • Nose: The nose offers orange marmalade and dark cherries alongside malt, dark chocolate and roasted nuts. Figs and a subtle tobacco note complete the aroma.
  • Palate: On the palate, the sherry notes are rich and full-bodied. Dried figs, hazelnuts and cocoa powder combine with a touch of oak spice.
  • Finish: The long finish gradually becomes drier. Dark fruit, tobacco leaves and roasted malt linger with a slight cocoa bitterness and gentle oak spice.

Distillery/Bottler:

Dalmore stands near Alness on the Cromarty Firth; Sir Alexander Matheson founded the distillery in 1839. The Highland distillery has belonged to Whyte & Mackay since 1960. Its unusually shaped stills, including flat-topped wash stills and spirit stills with water-cooled sections at the neck, are distinctive features of its distillation. Dalmore produced the spirit for this bottling; Signatory Vintage selected cask 14736 and bottled the whisky from it.

Andrew Symington founded independent bottler Signatory Vintage in 1988 and acquired Edradour Distillery in Perthshire in 2002. Signatory Vintage now operates there and identifies its single-cask bottlings with details including the distillation and bottling dates and the cask number.
