Dalmore Port Wood Reserve combines maturation in former bourbon casks made from American white oak with a tawny port finish. Half of the whisky remains in the bourbon casks, while the other half continues maturing in Tawny Port Pipes from Graham's in Portugal. The two portions are then married before bottling. The result brings together two different maturation paths rather than consisting entirely of port-matured whisky.
Fruit shapes the whisky's character, accompanied by sweet dessert notes and roasted accents. This expression carries no age statement and is bottled at 46.5% in a 0.7-litre bottle. It is non-chill-filtered and comes in gift packaging.
Tasting Notes:
Nose: The nose brings together sweet red berries, Seville oranges and plums. A dessert-like note recalls toffee pudding.
Palate: Nectarines meet creamy caramel on the palate. Roasted chestnuts and Java coffee complement the fruity, sweet flavours.
Finish: The finish reveals plums and sultanas, accompanied by Sanguinello blood oranges and macerated cherries.
Distillery/Bottler:
Alexander Matheson founded Dalmore in 1839. The distillery is located near Alness in the Scottish Highlands. Its twelve-point stag emblem derives from the Mackenzie family crest, reflecting the family's close historical connection with Dalmore.
Distinctive features of the distillation process include flat-topped wash stills and water-cooled necks on the spirit stills. Cooling causes some of the vapour to condense; the liquid flows back into the still, influencing the composition of the spirit. Dalmore also uses stills of different sizes, combining the spirits they produce before filling the casks. For subsequent maturation, the distillery uses casks with various previous contents; former bourbon casks and Tawny Port Pipes are central to Port Wood Reserve.
