For its Battlehill range, independent bottler Duncan Taylor bottled an eight-year-old single malt from the Speyside distillery Dalmunach. The whisky was bottled at 46% without added colouring.

Ripe apples and pears, citrus and a hint of pepper give the malt its fresh side. Toasted coconut and pecan cake emerge on the palate. Earl Grey and mild pepper linger with a delicate sweetness.

Tasting Notes:

• Nose: The nose offers ripe apples and pears, a light citrus note and a hint of freshly ground pepper.
• Palate: The whisky is creamy and soft on the palate. Sweet toasted coconut and fresh pecan cake are joined by caramelised sugar, vanilla, apricot and yellow plum. Cinnamon, nutmeg, malt and a subtle oak note round out the flavours.
• Finish: Earl Grey, mild pepper and a delicate sweetness linger through the long finish.

Distillery/Bottler:

Dalmunach stands beside the River Spey on the site of the former Imperial Distillery. Chivas Brothers completed the new distillery in 2014, and production began that October. The distillery forms part of Pernod Ricard’s Scotch whisky business.

Dalmunach uses 16 stainless-steel vessels for fermentation. Its eight copper stills are arranged in a circle: the wash stills are tulip-shaped, while the spirit stills are onion-shaped, echoing the still designs of the former Imperial Distillery. Duncan Taylor is an independent bottler based in Huntly, where it also has a bottling operation. The company selected this Dalmunach for Battlehill and bottled the whisky.
