Cónocht an Fómhair is part of Dingle's Wheel of the Year series and takes the autumn equinox as its theme. This Irish single malt is triple distilled, initially matured in bourbon casks and then finished in rum casks. As the eighth edition in the series, it combines these cask influences with a fruity, sweet and spicy character.

At 50.5%, this edition brings together fresh mint and sweet baked-goods notes with subtle hints of tropical fruit and nuts. Spiced fruit and caramel shape the finish. The whiskey has no added colouring and is non-chill filtered. It comes in a 0.7-litre bottle with gift packaging.

Tasting Notes:

• Nose: On the nose, fresh mint and toffee apple mingle with the aroma of rhubarb crumble with brown sugar, alongside icing sugar.
• Palate: The palate reveals hints of tropical fruit, sweet raisins, honey, coconut and hazelnut.
• Finish: The finish is clear and straightforward, with spiced fruit and warm caramel notes.

Distillery/Bottler:

Oliver Hughes, Liam LaHart and Peter Mosley founded Dingle Distillery on Ireland's Atlantic coast in 2012. The three friends had previously worked in the Irish craft beer scene and wanted to return to making whiskey in small batches. The independent distillery distils its whiskeys at its Dingle site, where they also mature and are bottled by the distillery.

Dingle triple distils its whiskey and manually controls each stage, from preparing the mash and adding yeast to separating the heads and tails. The casks are filled by hand. During maturation, the team regularly checks the whiskey through observation and tasting before it is also bottled by hand. Cónocht an Fómhair combines this approach with bourbon cask maturation and a subsequent rum cask finish.
