Special Features:

Maturation entirely in American oak bourbon casks defines this single malt. One of Eden Mill’s two core releases, it is also the distillery’s first bottling matured exclusively in bourbon casks. Its character brings together vanilla sweetness and cereal notes with floral accents and delicate oak and pepper spice.

This non-smoky whisky is bottled at 46% in a 0.7-litre bottle. It is not chill-filtered, and its colour comes entirely from cask maturation. Gift packaging is included.

Tasting Notes:

• Nose: On the nose, vanilla and honey mingle with oats and subtle oak spice. A light cinnamon note adds to the aroma.
• Palate: The palate offers creamy vanilla fudge alongside distinct cereal notes and a subtle rose-petal flavour. Pepper and delicate oak notes provide a spicy counterpoint to the sweetness.
• Finish: Vanilla and a delicate floral impression of roses linger on the finish.

Distillery/Bottler:

Eden Mill emerged in 2012 from Eden Brewery, founded by Anthony Kelly and Paul Miller in Guardbridge, west of St Andrews in Fife. The founders used buildings belonging to a former paper mill on a site that had previously housed the Haig family’s Seggie distillery. Whisky production followed in 2014, turning the brewery into a producer of beer, gin and single malt.

The connection with brewing also shaped the original whisky production. Alongside pale malt, Eden Mill used chocolate and crystal malts to develop different spirit characters. Fermentation lasted between 72 and 96 hours depending on the season, and distillation took place in three small alembic stills, each with a capacity of 1000 litres.
