Full maturation in an Oloroso Sherry Barrel meets heavily peated single malt from St George’s Distillery. This whisky belongs to That Boutique-y Whisky Company’s Wine Cask Series, which explores different wine cask influences on whiskies from various countries. This nine-year-old bottling developed its sherry character throughout maturation, rather than through a subsequent finish.

Batch 4 was bottled at its natural cask strength of 67%. Dried fruit and dark chocolate contrast with a dry palate that becomes increasingly peaty. The label depicts Saint George fighting the dragon from a viewpoint inside his helmet; the treasure being guarded is golden whisky.

Tasting Notes:

• Nose: The nose reveals dates, raisins and figs alongside wholemeal biscuits with dark chocolate. Sooty smoke follows, with a slightly salty note.
• Palate: The palate is dry, with hints of coffee grounds, dark chocolate, fresh ginger and salted prunes. Peat smoke builds in waves, leading to peppery spice.
• Finish: Smoke and salt linger on the finish, accompanied by a very subtle fruity note.

Distillery/Bottler:

St George’s Distillery in Norfolk is the home of the English Whisky Company. When production began in 2006, the family-run distillery brought whisky-making back to England after more than a century; its first single malt was released in 2009. It uses Norfolk barley and water from the Breckland. The distillery was built above its own mineral-rich water source, which it has used since production began.

That Boutique-y Whisky Company was founded in 2012 as an independent bottler. The company searches worldwide for distinctive whiskies, including bottlings that depart from a distillery’s usual style. Casks are sourced directly from distilleries, private owners or cask brokers, and selected by tasting cask samples. Emily Chappell’s hand-drawn labels draw on stories about the distilleries and their whiskies.
