Seven cask types shape Wilhelm from EVERMANN: Once Selected Bourbon, American oak, German oak, acacia, sweet wine, Oloroso sherry and chestnut. The whiskies matured in these casks are married together. Alongside the wood species and previous cask contents, different levels of toasting—the heat treatment of the wood—also play a part. Wilhelm is made from German malted barley and double-distilled in copper pot stills in the Black Forest.

The bourbon casks previously held American whisky once and form the foundation of the cask selection. Other casks include heavily toasted acacia casks, whose heads are also toasted. Their strong influence means that whisky matured in them is used only in a smaller proportion for Wilhelm. The sweet wine casks previously held late-harvest white wines, mainly made from Bacchus or Scheurebe grapes. The chestnut casks receive a medium toast.

Wilhelm has a dark amber colour in the glass. Its fruit-led character combines sweetness with wood spice and restrained smoke. Blossom honey and liquorice broaden the aromatic range. The whisky is offered at 42% in a 0.7-litre bottle, with embossed glass and a dark green label defining its presentation.

Tasting Notes:

• Nose: Candied fruit and fruit bread mingle with brioche and nutty notes on the nose. Caramel and wood spice join them, accompanied by subtle smoke.
• Palate: The whisky is powerful on the palate, with pronounced dried fruit and caramel. Honey and nougat add to the sweetness, while distinct wood spice and a hint of cold smoke provide a contrast.
• Finish: The long finish is gentle and warming, accompanied by delicate wood spice.

Distillery/Bottler:

EVERMANN is the whisky brand of Bimmerle KG in the Black Forest. Based in Achern-Mösbach, the family business is known for fruit spirits and later expanded its range to include gin and whisky, among other drinks. Theo and Wilhelm, the first two EVERMANN whiskies, were launched in spring 2022. Preparations for cask management and maturation had begun several years earlier.

Master blenders Werner Benz and Rudolf Hermann oversee the combination of different cask characters at EVERMANN. Production includes double distillation in copper pot stills and separating the heart of the spirit from the heads and tails. Distillation, cask maturation and bottling all take place in the Black Forest, while water from the region brings the whiskies to bottling strength.
