For this Finglassie, Rest & Be Thankful combines maturation in former Islay bourbon casks with a finish in Jamaican rum barrels. The smoky single malt comes from InchDairnie Distillery in the Lowlands. Ten bourbon casks were selected for Small Batch #3 before the whisky received its rum finish. The resulting bottling brings together peat, citrus notes and tropical fruit.

The malted barley for this bottling comes from Yorkshire in England. The whisky was distilled in January 2017 and bottled in July 2023 after six years of maturation. The release comprises 3,720 bottles, each containing 0.7 litres at 46% alcohol. It was bottled without chill filtration or added colouring.

Tasting Notes:

• Nose: The nose reveals peat with vegetal notes, complemented by subtle hints of pineapple and spice.
• Palate: On the palate, lemon and peat combine with orange notes whose character recalls sherry.
• Finish: Ripe banana and cereal linger on the finish.

Distillery/Bottler:

InchDairnie is located in Fife, north of Edinburgh, and began distilling in December 2015. The distillery uses a hammer mill to grind the grain very finely. Once the starch has been converted into sugar, a mash filter presses the sugar-rich liquid through filter membranes. This process provides a high yield and allows different types of grain to be processed. The fermentation vessels stand outdoors, and the distillery uses different yeasts according to the season and the grain. For single malt distillation, it uses copper pot stills with two condensers each, providing additional copper contact while also enabling energy recovery.

Rest & Be Thankful is the independent bottler behind this edition. The brand launched in 2012 with single-cask bottlings, among the first of which were whiskies from Bruichladdich, Port Charlotte and Octomore. Springbank, Bowmore and Macallan were among those added later. Alongside whisky, the company also focuses on rum. Its single-cask and small-batch releases are bottled without additives, colouring or chill filtration.
