Special Features:

This nine-year-old Speyside single malt initially matured in American oak ex-bourbon casks before moving into Hogsheads that had previously held Amontillado sherry for its finish. Amontillado is a dry style of sherry that begins as Fino and then undergoes a further maturation phase without the flor yeast layer. This oxidative ageing gives the sherry a deeper colour and a more pronounced character. Here, the former Amontillado Hogsheads bring dark cherries, roasted hazelnuts and caramel sauce together with GlenAllachie's honeyed fruitiness.

This limited bottling belongs to The Wood Collection and was introduced in 2024 as part of a range exploring the influence of different sherry cask types on whisky sharing the same initial cask maturation. It is bottled at 48% alcohol without chill filtration or added colouring. The bottle contains 0.7 litres and comes in gift packaging.

Tasting Notes:

• Nose: On the nose, soft orchard fruit, cinnamon and heather honey combine with butterscotch, hazelnuts and a dark tobacco note.
• Palate: Honeycomb, maraschino cherries and dried apricots lead on the palate. Poached pears, blood orange, mixed nuts and cinnamon follow.
• Finish: The finish is medium in length and initially led by oak. Orange peel, cinnamon and brown sugar emerge as it fades.

Distillery/Bottler:

GlenAllachie Distillery produces this single malt in Speyside, releasing it under the GlenAllachie brand as an official bottling. Around 50,000 maturing casks are stored in 16 warehouses on site. Billy Walker and his team monitor their development and decide when a move to another cask type would usefully complement maturation. For the wood-finish range, Walker selects suitable batches and matching finishing casks, drawing on long-standing relationships with bodegas and distilleries.

The distillery's current production methods include eight stainless-steel washbacks and a fermentation time of 160 hours, which encourages the formation of esters and other aroma compounds. Double distillation follows. Each pair of wash and spirit stills has dedicated receivers for low wines and for heads and tails. This helps keep alcohol strength and volume consistent between production runs.
