A Koval bourbon finish shapes this Glencadam from Murray McDavid's Benchmark series. Maturation in bourbon hogsheads was followed by further ageing in first-fill Koval bourbon casks. Bourbon therefore provides the common cask influence across both stages, with former bourbon casks being used for Scotch whisky for the first time during the finish.

The Single Malt was distilled in 2012 and bottled in spring 2023 at ten years old. The limited release comprises 919 bottles. It has an alcohol content of 46%, contains no added colouring and is non-chill-filtered. The 0.7-litre bottle comes in gift packaging.

Tasting Notes:

• Nose: On the nose, overripe bananas meet the aroma of custard-filled pastries. Vanilla is pronounced.
• Palate: The whisky feels creamy and full-bodied on the palate. Candied pears combine with chai spices and an impression of cool whipped cream.
• Finish: The finish fades gently with an oily texture. Sweet oak spice accompanies the lingering flavours.

Distillery/Bottler:

Glencadam is located in Brechin in the eastern Highlands. David Scott founded the distillery in 1825 on land belonging to his father-in-law, George Cooper. Following its closure in 2000, Angus Dundee Distillers acquired the distillery in 2003 and resumed production.

Glencadam's production today uses unpeated Scottish malted barley and a historic Porteus mill. In the traditional mash tun, the milled malt is processed in three stages with progressively hotter water. The resulting wort ferments with distiller's yeast in washbacks made from Oregon Pine, a Douglas fir timber.

Murray McDavid is the independent bottler behind this edition. The company was founded in 1994 by London wine merchants Mark Reynier and Simon Coughlin, together with Gordon Wright of Springbank. It is based at Coleburn Distillery in Speyside. The team selects casks from wine producers, bodegas and American whiskey distilleries, using freshly emptied casks for further maturation. In Coleburn's traditional warehouses, it monitors the whisky's development to balance cask influence with the character of the spirit.
