Glencadam Reservé de Burgundy undergoes a finish in Pinot Noir wine casks from Burgundy, France, after its bourbon-cask maturation. For this small-batch bottling, the Master Distiller selects whisky matured in American oak ex-bourbon casks in the historic dunnage warehouses. The selected whiskies are married before further maturation in carefully chosen Pinot Noir barrels.

The Single Malt is bottled at 46%. Its colour remains natural, and it is not chill-filtered.

Tasting Notes:

• Nose: The nose reveals bold dark-fruit aromas, with sour cherry jam and stewed plums. Chocolate mousse adds to the bouquet.
• Palate: The whisky is sweet and oily on the palate. Cooked blackcurrants, Brazil nuts, blackberries and banana bread combine with subtle hints of espresso, cloves and star anise.
• Finish: Mocha coffee and Black Forest gateau linger on the finish, giving way to warming notes of ginger, nutmeg and cedarwood.

Distillery/Bottler:

Glencadam is located in Brechin in the eastern Highlands. David Scott founded the distillery in 1825 on land belonging to his father-in-law, George Cooper. Following its closure in 2000, Angus Dundee Distillers acquired the distillery in 2003 and restarted production.

Glencadam mills unpeated Scottish malted barley in a historic Porteus mill. In the traditional mash tun, the milled malt is processed in three stages using increasingly hot water. The resulting wort ferments with distiller's yeast in wooden Oregon Pine washbacks. During double distillation, the distiller selects the heart of the run for the future whisky. Maturation takes place in warehouses that include the dunnage warehouses built in 1825.
