Kavalan Oloroso Sherry Oak combines maturation in first-fill Oloroso sherry casks with a bottling strength of 46%. The single malt is distilled twice in copper pot stills and matured in Spanish sherry casks. Solist Sherry forms its basis. The whisky is then reduced to 46% with Kavalan spring water: this release is not bottled at cask strength.

Yilan’s warm, humid climate accelerates cask maturation compared with cooler whisky regions. The sherry casks give the whisky its natural mahogany colour. It is bottled at 46% in 0.7-litre bottles, without added colouring or chill filtration. Dried fruit, nuts and roasted notes shape its character, while chocolate and tobacco add darker notes.

Tasting Notes:

• Nose: On the nose, dried cherries and raisins mingle with roasted almonds, oak and vanilla. Spices and a hint of marzipan complete the aromas.
• Palate: On the palate, salted caramel, roasted almonds and cherries sit alongside black pepper and a hint of espresso. Dark chocolate, sweet dried fruit, oak and leather add further notes. The whisky is smooth and balanced, both sweet and slightly dry, with dates, currant jam and Christmas spices.
• Finish: The finish is medium-long to long and slightly peppery. Spicy oak and raisins linger with warmth and a slight dryness.

Distillery/Bottler:

Kavalan Distillery is located in Yilan in northeastern Taiwan and belongs to the King Car Group. Construction began in April 2005, and the first distillation took place in March 2006. The project was initiated by Tian-Tsai Lee, founder of the food group, who was able to establish his own whisky distillery after the state spirits monopoly ended. British whisky expert Dr. Jim Swan advised on its development.

Heat and high humidity define the maturation conditions, while sea and mountain winds influence the location. Kavalan uses spring water from Snow Mountain. The distillery’s name comes from the indigenous name for Yilan. Sherry Oak joined the range in 2015 and is an official bottling of the Kavalan brand.
