Special Features:

For Chapter II of the Friar John Cor Cask Strength Congregation, Lindores Abbey brings together whisky matured in bourbon casks, STR wine casks and rum casks with peat influence. STR wine casks have been shaved, toasted and recharred. The rum casks give this single malt’s fruity sweetness an earthy, lightly smoky side. The distillery bottles this limited edition on site at cask strength at 60.9%, without added colouring or chill filtration.

The edition recalls Friar John Cor and an entry in the Scottish accounts of 1494: he was commissioned by the king to make aqua vitae from eight bolls of malt. The black bottle also reflects this historical connection in its design.

Tasting Notes:

  • Nose: On the nose, maple syrup and caramelised sugar meet roasted banana, dates and apple. Cinnamon accompanies a delicate earthy, peaty note.
  • Palate: On the palate, pear, roasted banana, cinnamon and caramelised almonds emerge. Subtle earthy, smoky peat notes and maritime hints follow; the texture is smooth and velvety.
  • Finish: The long, warming finish remains spicy: oak and vanilla combine with cinnamon, ginger, black pepper and chilli.

Distillery/Bottler:

Lindores Abbey Distillery stands near Newburgh in Fife, beside the ruins of the medieval abbey. Its name points to the 1494 entry, the earliest written reference to malt-based aqua vitae in Scotland. Friar John Cor’s association with the abbey has not been conclusively established; the distillery has researched the connection extensively and made it the theme of this edition.

The modern distillery released its first publicly available single malt in 2021. Its general production methods include long fermentation in Douglas-fir washbacks and distillation in the stills it calls its “Sister Spirit Stills”. The cask selection sets Chapter II apart from the distillery’s other releases.
