Special Features:

This four-year-old Italian whisky from PUNI Distillery was finished in a small, specially constructed Pedro Ximénez sherry Octave for the Darkness series. The blended malt was bottled at 54.2% in a bottle containing 0.5 litres. It is non-chill-filtered and contains no added colouring.

A small Octave has a greater internal wood surface area relative to its liquid volume than a large cask. This allows more intensive interaction between the whisky and the cask wood. Here, the influence of the PX Octave combines with a character of dark fruit, coffee, tobacco and leathery oak.

Tasting Notes:

• Nose: The nose reveals toasted almond biscuits, chocolate-coated coffee beans and plum jam. A subtle hint of fragrant tobacco complements these impressions.
• Palate: On the palate, waxy citrus notes and mocha combine with cooked stone fruit. Spice reminiscent of cigar boxes and leathery oak add to the flavours.
• Finish: On the finish, a hint of pepper accompanies earthy coffee and bitter woody spice.

Distillery/Bottler:

PUNI is based in the Vinschgau valley in South Tyrol and uses mountain spring water from Stelvio National Park. The distillery has been distilling in traditional pot stills since 2012. Fermentation takes place in five vessels made from local larch wood by a South Tyrolean cooperage and lasts up to 96 hours. Both stills are heated with superheated water rather than steam, allowing precise temperature control during distillation.

Darkness is an independent bottling series from Atom Brands. It focuses on finishing whisky in small, specially rebuilt sherry casks. This PUNI underwent its final maturation in a Pedro Ximénez Octave; small cask formats are central to the Darkness concept.
