This ten-year-old Sherry Cask release shares the smoky Islay foundation of the regular Seaweed & Aeons & Digging & Fire, but changes the proportion given a sherry finish. Rather than just 25%, the entire whisky is finished in sherry casks. The sherry sweetness softens the powerful peat character without overshadowing it. Like the standard release, this single malt is ten years old. The sherry release is bottled at 40%.

The greater sherry influence brings dark fruit notes and spicy sweetness together with vegetal peat and savoury, meaty hints. Oat biscuits and molasses add to this contrast, while citrus notes and singed hay provide further accents. The full sherry finish and moderate alcohol strength distinguish this variant within the Seaweed family.

Tasting Notes:

• Nose: On the nose, oat biscuits, vegetal peat and blackcurrant mingle with grilled meat and molasses. Clove-studded orange and a hint of chocolate mousse add further notes.
• Palate: On the palate, airy caramel confectionery and cinnamon meet peat that remains clearly perceptible. Red grape and jammy raisin gradually build, accompanied by brightening citrus notes. A subtle note of singed hay emerges later.
• Finish: The meaty malt character returns on the finish, supported by warm oak. Red grape tannins linger and persist in the aftertaste.

Distillery/Bottler:

Atom Labs is the bottler of this &Whisky release. The single malt comes from an unnamed distillery on Islay. The brand was developed by Atom Brands, which emerged in 2011 from the business surrounding spirits retailer Master of Malt. Its brand portfolio also includes Ableforth’s and That Boutique-y Whisky Company.

Atom Labs was founded in 2019 as Atom Brands’ in-house development workshop. There, the company draws on its own expertise to rapidly turn new drinks ideas into prototypes and test them. The Seaweed family explores the combination of peat and cask maturation in different expressions, varying characteristics such as sherry influence and alcohol strength.
