Special Features:

The Sherry Wood Finish combines initial maturation in oak with subsequent finishing in sherry casks. Its base is a spirit distilled from malted barley by Langatun. Seven Seals uses a proprietary accelerated maturation process. This release is bottled at a cask strength of 58.7% in a bottle containing 0.5 litres and contains no colouring.

Tasting Notes:

• Nose: On the nose, creamy caramel notes meet caramelised almonds. Cloves and cinnamon complement the aroma, alongside a sweet note of wine gums.
• Palate: The spirit feels balanced on the palate. Toffee and gingerbread combine with the flavour of candied walnuts.
• Finish: The medium-length finish recalls biscuit dough.

Distillery/Bottler:

Seven Seals Innovation AG was founded in 2017 and is based in Stans in the canton of Nidwalden. Its work centres on the Stockhausen Method, developed by Dr. Dolf Stockhausen. This method intensifies the exchange of flavour compounds between wood and spirit, thereby shortening maturation time. The company also aims to enable high-quality oak casks to be reused sooner.

The spirit for this release comes from Langatun. The distillery moved into the historic Kornhaus in 2014. Its production methods are closely linked to brewing: in 2017, the mash was prepared at the brewery and then fermented for six days at Langatun. Distillation took place using Holstein equipment. Seven Seals carries out the subsequent finishing of this release.
