Maturation in an American oak ex-bourbon barrel defines this single-cask release from Sullivans Cove. The whisky was distilled on 22 December 2008 and bottled on 6 September 2021 after twelve years of maturation. Cask TD0351 yielded 260 bottles.

Bourbon-cask maturation adds toffee and caramel to the fruity character. This non-smoky single malt is bottled at 46.5%, without chill filtration or added colouring. The 0.7-litre bottle comes in gift packaging.

Tasting Notes:

• Nose: On the nose, apples, nectarines, grapes and oranges mingle with banana. Vanilla ice cream and the aroma of freshly baked cake add further notes.
• Palate: The palate reveals sweet fruitiness with pear, peach and candied pineapple. Ice cream and warm caramel sauce complement these impressions, with pronounced oak spice providing a contrast.
• Finish: Juicy fruit notes and spice linger in the finish. Vanilla and a creamy texture shape the lingering impression.

Distillery/Bottler:

Sullivans Cove produces its whisky entirely in Tasmania, using water and malted barley from the island. Its current production methods combine slow fermentation with double distillation. Reflux within the stills encourages the development of aromatic esters, while worm-tub condensers complement the distillation equipment.

For maturation, Sullivans Cove uses casks holding 200 to 300 litres and leaves its warehouse without temperature control, exposing the casks to Tasmania’s natural conditions. Repeated tastings determine when a whisky is bottled, rather than a fixed release date. Cask and bottle numbers on the label make each single-cask release traceable.
