Special Features:

An American oak cask previously used for Tawny wine shapes this single malt from Sullivans Cove. Its previous contents were Australian port-style wine. The whisky matured for twelve years in single cask TD0318; chocolate, dried fruit and oak define its character.

The cask was filled on 22 September 2008. On 9 April 2021, the whisky from it was bottled at 47.4%, yielding 422 numbered bottles. It is non-chill-filtered and contains no colouring; its dark colour comes from cask maturation.

This non-smoky whisky combines dried-fruit sweetness with creamy chocolate notes and spicy wood. The bottle contains 0.7 litres and comes in a dark blue gift box with gold accents.

Tasting Notes:

• Nose: On the nose, the whisky evokes moist, freshly baked chocolate cake. Dried fruit and subtle woody notes accompany delicate oak spice.
• Palate: The palate is full-bodied and creamy. Intense notes of sultanas, dates and dried figs meet creamy chocolate confections and the spicy structure of mature oak.
• Finish: The medium-length finish leaves a sweet note reminiscent of chocolate-coated raisins.

Distillery/Bottler:

Sullivans Cove is a Tasmanian distillery in the Hobart area that has focused on long maturation since 1994. Its whiskies use malted barley grown entirely on the island and Tasmanian water. Slow fermentation is followed by double distillation. The team places particular emphasis on slow distillation and reflux within the still to encourage flavour development. Traditional worm tub condensers contribute to the full-bodied spirit.

For maturation, the distillery selects casks with capacities of 200 to 300 litres and does not use temperature control in its warehouse. Tasmania’s natural conditions thus remain part of the maturation process. The team tastes each cask repeatedly over the years and decides when to bottle according to its development rather than a fixed release schedule. Individual cask and bottle numbers provide traceability for the single-cask releases; bottling and labelling are carried out by hand.
