Maturation in ex-bourbon casks shapes The Dubliner Bourbon Cask. This Irish blend combines single malt and grain whiskey; it is three years old and bottled at 40% alcohol.

Malt and vanilla add to its fresh, fruity character. These initial impressions are followed by honey and caramel, while a hint of pepper provides a spicy contrast. The whiskey can be enjoyed neat or over ice and also works well in cocktails.

Tasting Notes:

• Nose: The nose is fresh and light. Green apple meets grassy notes and cereal.
• Palate: The whiskey is smooth on the palate, with honeyed sweetness and a pepper note.
• Finish: The finish is silky and leaves a caramel note.

Distillery/Bottler:

The Dubliner is part of the whiskey range of The Dublin Liberties Distillery. Opened in 2019, the distillery is located in The Liberties, Dublin's historic distilling district. Its building dates from the 18th century and was once a mill, later becoming a tannery for rabbit skins.

For its own distillation, the distillery uses Irish malt, water from its own well and selected yeast strains. It employs triple distillation: a still with a capacity of 10000 litres is followed by two further stills, each holding 6000 litres. Its technical equipment includes heat recovery; spent grain and the liquid remaining after the first distillation are supplied to local farms as animal feed.
