Special Features:

This single malt combines bourbon-cask maturation with a sherry finish. The whiskey first matures in first-fill bourbon casks, then in sherry casks from Bodegas Baron. It belongs to West Cork’s Cask Finish Series, whose expressions share the same initial maturation but use different finishing casks.

West Cork uses only malted barley for this whiskey. It is produced in small batches and distilled three times; the series uses water from Mullaghmesha. The single malt is bottled at 43% in a 0.7-litre bottle. It is non-chill-filtered and contains no added colouring.

Tasting Notes:

• Nose: On the nose, dried plums and figs mingle with sherry aromas and vanilla. Subtle notes of lightly toasted oak complement the aromas.
• Palate: On the palate, the whiskey starts sweet, then turns dry and reveals spicy notes. Malt and delicate woody nuances add to the flavour.
• Finish: A delicate spiciness lingers through the medium-length finish.

Distillery/Bottler:

West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Ger McCarthy and Denis McCarthy. They began in a room behind Denis’ house in Union Hall, working with two small stills purchased from a Swiss schnapps producer. In 2014, the company moved to Skibbereen in County Cork.

As the business expanded, West Cork built some of its distillery equipment itself. Today, the operation is based on Marsh Road in Skibbereen. Production, distillation, maturation and bottling of West Cork whiskeys all take place at its own site. The distillery sources ingredients locally where possible and works with local service providers.
