Wolfburn first matured this Highland Single Malt in ex-bourbon casks before finishing it in Spanish oak Manzanilla sherry casks. Dry sherry notes complement its fruity, sweet character. This limited release is bottled at 46% without added colouring or chill filtration.

The whisky combines a full-bodied character with pronounced sweetness and an oily texture. The Manzanilla finish introduces dry wine notes that contrast with the fruit aromas and delicate sweet accents.

Tasting Notes:

• Nose: On the nose, golden syrup and cashew cream combine with wine-like notes. The sweet aromas have particular depth.
• Palate: On the palate, the whisky coats the tongue with a rich, oily texture as its flavours continue to unfold. Dry Manzanilla notes are followed by sultanas, plums and dates, accompanied by delicate hints of toffee and honey.
• Finish: Sweet wine and fruit notes slowly fade in the finish. A hint of caramel lingers.

Distillery/Bottler:

Wolfburn produces, matures and bottles its whisky at its own site in Thurso. The distillery lies in the far north of mainland Scotland. Its production methods include long fermentation and slow, gentle distillation; maturation takes place in purpose-built warehouses near the sea.

William Smith founded the historic Wolfburn Distillery on the outskirts of Thurso in 1821 and named it after the stream that supplied its water. Today's distillery stands close to the historic site, a little farther along the stream towards the sea. In 2013, Wolfburn resumed distillation after 157 years.
