Dailuaine 16 Year Old is the Speyside distillery's regular official bottling in Diageo's Flora & Fauna range. Bottled at 43%, it has a distinctly sherry-influenced style, combining rich sweetness and nuttiness with surprising citrus freshness.

Tasting Notes:

• Nose: The nose has depth: cheddar rind and old Madeira emerge first, accompanied by walnut and light butterscotch. Over time, overripe oranges with firm peel appear. A little water shifts the cheese rind towards impressions of cheesecloth and damp muslin. The orange then feels fresher and joins lemon before candied peel emerges. Sandalwood appears later, while a light toffee note gradually grows stronger. Freshness and maturity coexist.
• Palate: On the palate, the whisky feels full, sweet and warming. A little water leaves this profile intact: citrus freshness meets deeper flavours and a hint of Highland Toffee.
• Finish: The finish is warming and leaves a lightly nutty impression.

Distillery/Bottler:

Dailuaine Distillery produces this Speyside malt, an official bottling in Diageo's Flora & Fauna range. William Mackenzie founded the distillery in 1852 between the foot of Ben Rinnes and the River Spey. Much of its production goes into blended Scotch, including Johnnie Walker. The distillery uses rapid distillation, which helps the spirit retain a fuller body. Stainless steel condensers reduce copper contact, allowing more sulphur compounds to remain in the new spirit. Introduced in 1991, the Flora & Fauna bottling showcases this distillery's spirit, otherwise produced mainly for blends, as a 16-year-old single malt in its own right.
